  • Potatoes (thin matchsticks or small cubes)

  • Turmeric Powder

  • Soybean Oil
    3 tbsp
  • Cumin Powder
    1/2 tsp
  • Red Chilli Powder
    1-1.5 tsp
  • Salt
    1 tsp

Serving

  • Coriander (optional, chopped)

  • Kadai or Frying Pan

    Hungarian pantry version: soybean oil stands in for mustard oil, and red chilli powder covers for both fresh and dried chillies. A pinch of mustard powder added with the spices recovers some of the mustard-oil sharpness.

Prep

    Peel and cut Potatoes .
    Potatoes: 4 (thin matchsticks or small cubes)

    Thinly slice Onion .
    Onion: 1 (large)

Frying

    Heat Soybean Oil in Kadai or Frying Pan on medium-high until hot.
    Soybean Oil: 3 tbsp

    Add the sliced onion and fry until soft and lightly golden.

    Add the potatoes, then Turmeric Powder , Cumin Powder , Red Chilli Powder and Salt .
    Turmeric Powder: 1/4 tsp, Cumin Powder: 1/2 tsp, Red Chilli Powder: 1-1.5 tsp, Salt: 1 tsp

    Mix well to coat evenly.

    Lower the heat, cover, and cook for ⏱️ 10-12 min , stirring every few minutes.

    Uncover and fry on higher heat for ⏱️ 2-3 min .

Serving

    Garnish with Coriander .
