Hungarian pantry version: soybean oil stands in for mustard oil, and red chilli powder covers for both fresh and dried chillies. A pinch of mustard powder added with the spices recovers some of the mustard-oil sharpness.
Prep

1Peel and cut Potatoes .Potatoes: 4 (thin matchsticks or small cubes)

2Thinly slice Onion .Onion: 1 (large)
Frying

3Heat Soybean Oil in Kadai or Frying Pan on medium-high until hot.Soybean Oil: 3 tbsp

4Add the sliced onion and fry until soft and lightly golden.

5Add the potatoes, then Turmeric Powder , Cumin Powder , Red Chilli Powder and Salt .Turmeric Powder: 1/4 tsp, Cumin Powder: 1/2 tsp, Red Chilli Powder: 1-1.5 tsp, Salt: 1 tsp

6Mix well to coat evenly.

7Lower the heat, cover, and cook for ⏱️ 10-12 min , stirring every few minutes.

8Uncover and fry on higher heat for ⏱️ 2-3 min .
Serving
